For the Cake:
350g Self raising flour
 4 Tablespoons Cocoa Powder
 2 Teaspoons Bicarbonate soda
 300g Caster sugar
 4 Eggs, Beaten
 300 ml Sunflower oil
 300 ml Semi skimmed milk
 4 Tablespoons Golden syrup
For the Coating and filling:
200g butter
700g icing sugar
6 tablespoons cocoa powder
5 tablespoons milk
Splash of Coffee
Pinch of Salt


Pre-heat oven to 180ºC/350F/Gas Mark 4. Grease and line two 18cm (8 inch) sandwich tins.

Sieve the flour, cocoa and Bicarbonate of Soda into a bowl. Add the sugar and mix well.

Make a well in the centre and add the syrup, eggs, oil and milk. Beat well with electric whisk until smooth.

Spoon the mixture into the two tins and bake for 25 - 30 minutes until risen and firm to the touch. Remove from oven, leave to cool before turning out onto a cooling rack.

To make your Chocolate Fudge Frosting:-

Slowly and gently melt the butter in a pan. Add the cocoa and up the heat, cooking it gently for a minute or so, then add the coffee and icing sugar. Add the milk gradually to a stiff consistency and keep stirring until you have a glossy, smooth paste. Allow it to cool, stirring occasionally to stop a crust forming

Use 1/3 to sandwich your cake together, and 2/3 for the topping and sides.
