200g Granulated Sugar
150g Butter or Margarine
3 Ripe Bananas
1 teaspoon Vanilla Extract
130g Rolled Oats
200g Plain Flour
1 teaspoon Bi-carbonate of Soda
1 teaspoon Ground Cinnamon
200g Plain, Milk or White chocolate chips
100g Melted Dark Chocolate
Preheat oven to 175 C
Cream together sugar and butter until light and fluffy, add mashed bananas, vanilla and egg and mix well.
Add rolled oats, cinnamon, bi-carbonate of soda, flour and mix until combined.
Add chocolate chips and mix again.
The mixture should be quite wet.
Using an ice cream scoop or 2 tablespoons, drop spoons of the mix onto lined baking sheets, flatten slightly.
Bake for 15-20 minutes until golden brown. Allow to cool on sheet for 2 minutes before removing and cooling completely on a wire rack.
When completely cold, dip tops of cookies in melted dark chocolate.
Store in a sealed container in the fridge and enjoy
